Gnocchi & (leftover) Turkey Soup

1 package Cucina Fresca Gnocchi
4 cups chicken stock
1 large onion, peeled and sliced
3 celery ribs, chopped
2 large carrots, peeled and sliced
1 large portabella mushroom, stemed and chopped
1 bunch of fresh parsley, chopped
salt and pepper to taste
1-2 cups leftover (cooked)turkey, chopped

  1. Place onion, celery, carrots, mushroom, parsley and chicken stock in soup pot.

  2. Bring to boil. Reduce to simmer and cook until vegetables are tender, about 20 minutes.

  3. Bring back up to boil and add gnocchi. Cook 4 minutes or until gnocchi are tender.

  4. Add chopped turkey.
