1 jar Cucina Fresca Smoked Tomato SaucePhoto: Bradley Glaberson
15 oz canned Cannellini beans, drained and rinsed
1/4 c. extra virgin olive oil
2 c. peeled chopped carrots (about 3 carrots)
2 c. chopped celery (about 4 stalks)
2 c. water
 

Meal Preparation:

  1. Place rinsed beans in a bowl of cold water and set aside.
  2. In pot, sauté carrots and celery in extra virgin olive oil over medium heat for ten minutes.
  3. Add sauce, water and vegetables, and simmer for 20 minutes.
  4. Drain beans, add to pot, and simmer for a few minutes more. Enjoy!
