These shrimp make a great party appetizer. You can make them a day or two ahead and just keep in the refrigerator until party time. Make a few extra if you plan to invite me to your party, I love this dish!
4 Tbl. Cucina Fresca Pesto Sauce
1 pound raw shrimp, peeled and deveined
Preheat oven to 425 degrees.
Wash shrimp with ice cold water then pat dry with clean paper towel. Liberally coat shrimp with Pesto Sauce. Place shrimp in a casserole dish and bake for 5 to 7 minutes. Chill shrimp and sauce. You can drizzle all the extra olive oil on to the cold shrimp when serving.
