This is a great salad for the summertime served either on its own over lettuce leaves or in a sandwich or tortilla wrap. The sun-dried tomatoes provide a chewy burst of flavor and sweetness and the nuts give just the right amount of crunch.
2/3 cup Cucina Fresca Pesto
4 cups cooked chicken breast
1 stalk celery, diced
1 cup sun dried tomatoes, softened in warm water and diced
1/2 cup pine nuts
2/3 cup plain greek yogurt
1/3 cup mayonnaise
Juice of 1 lemon
Salt and pepper, to taste
Butter Lettuce leaves
1. Mix chicken, celery, sun-dried tomatoes, and pine nuts together.
2. Mix yogurt, mayonnaise, Pesto, and lemon juice together.
3. Mix the dressing with the chicken mixture.
4. Season salad to taste and serve over butter lettuce leaves or as a sandwich or wrap.
