The creaminess of our Tomato Vodka Sauce balances the strong flavors of the olives and capers. In addition to a crostini topping, try it as a sandwich spread, a condiment for fish, or as a base for a salad dressing. This tapenade is a terrific source of heart-healthy monounsaturated fats and antioxidants!
1 jar Cucina Fresca Tomato Vodka Sauce
1 cup black olives, pitted
2 scallions, coarsely chopped
1 clove garlic, coarsely chopped
1 tbls capers, drained
1 1/2 tablespoons extra-virgin-olive-oil
1 cup Cucina Fresca Tomato Vodka Sauce
Salt and pepper, to taste
3 tablespoons flat-leaf-parsley, finely chopped
Crostini or crudités
1. Place the olives, scallions, garlic, and capers in the bowl of a food processor fitted with a steel blade. Pulse until everything is finely chopped. If you do not have a food processor, you can finely chop everything by hand and mix the ingredients together with a spoon.
2. Add olive oil and Tomato Vodka Sauce and process to your desired consistency.
3. Season to taste with salt and pepper and stir in parsley as a garnish.
4. Serve with crostini or your favorite crudités.
